One of our favorite foods to eat is soup. There is nothing like cooking up a big pot of soup and sharing with friends. Soup is the kind of food that you can eat all the time. Soup is the type of food that you keep in the fridge and look forward to heating up and enjoying with some good bread, and not just on a cold winter day. We don't care what the weather is, savoring soup anytime is a must, at least for us. We are not really into eating only heavier soups during the deep winter months or light cold soups in the summer months. Whatever flavor we are craving, we get the soup pot going! We like to share.
Here is a recipe that will make your mouth water for more.
And, it is fast and easy. The only time commitment is preparing the squash but you can do that ahead of time. The other option is using frozen squash but we prefer fresh roasted.
Thai Butternut Squash Soup
Serves 4
1 Cup Coconut Milk
1/2 tsp Thai red curry paste
4 tsp sugar
1/2 tsp salt
2 cups vegetable or chicken broth
1 Keiffer lime leaf (optional)
4 Cups chopped fresh squash. You can roast it first then put in soup.
or 2 12 oz pkgs of frozen cooked squash.
1 lime
2 Cups baby spinach
Chopped fresh cilantro (optional)
Pan-fried tofu
1/2 a cake of firm tofu (8 oz)
1 tblsp soy sauce or tamari
1/2 tsp Thai red curry paste
1 tsp coconut oil (you can use vegetable oil too, but CO is awesome)
In soup pot, whisk together coconut milk, curry paste, sugar, salt and broth. Add the lime leaf and squash, cover, and bring to simmer. If squash is already roasted, add squash and simmer for a couple minutes. If frozen, add and cook covered for 15 minutes. Tip: In our opinion the dish tastes better if you roast fresh squash first!
Prepare tofu. Cut tofu into small cubes, put in bowl. Toss with soy sauce and curry paste. Heat oil on medium heat. Add tofu and cook for about 5 minutes.
Lightly grate the lime peel and juice the lime. Add 1 tsp of the zest and 2 tblsp of the juice to the simmering soup. Stir in spinach and tofu and cook just until spinach wilts a little. Garnish with cilantro!
Don't be surprised if the recipe only serves 2!
Be aware of slurping too fast...
